Whew! I have been so busy lately (so I apologize if I'm lacking in comments, blog posts, etc)....and add in a good ol' fashioned snow storm on top of that and things get crazier! (more on that later...) Anyways, I just wanted to quick post on this hot cocoa recipe I discovered! It is the bomb diggity I tell ya! :) I am loving handmade gifts this year so I thought this hot cocoa mix would be perfect for Owen's preschool teachers. I made it all cutesy in little jars and along with some cookies, I think maybe it will be a hit?! Here is the recipe....if you don't like rich hot cocoa don't add the entire half cup. But, seeing as I love my chocolate, I added the full amount. It was delicious.: ) If you give this a try, let me know what you think! Now....time to go do some cookie baking!
Hot Cocoa Mix
4 cups nonfat dry milk powder
1 ½ cups sugar
1 cup non-dairy coffee creamer
2/3 cup unsweetened cocoa powder
1 package (4 oz.) instant chocolate fudge pudding
Mix all ingredients together in a large bowl..
For a finer consistency, may use a blender or food processor.
Add ¼ to ½ cup of mix to 8 ounces of boiling water.
Enjoy!!
