A few weeks back...I felt a little bit of Fall in the air. Something had changed.....
And with that change came my need for yummy Fall foods....
But, this hankering was not for a savory food, it was for a delicious treat........
Chocolate Chip Pumpkin Bread.
Need I say more?
You must eat it at your own risk. I have eaten half a loaf in one sitting. (shame on me) Enough said.
Although, it's from Cooking Light. And it has pumpkin--a super food. And only egg whites. That makes it healthier, right?
Anyways, so I had to go out and find some canned pumpkin to make this bread.
So I went to the grocery store--no pumpkin.
I go to another store--no pumpkin.
I call another store--no pumpkin until November!
Did you know there was/is a pumpkin shortage? I really had no idea. So most stores would not be getting pumpkin until later in the season.
I was so disappointed. You really can't mess with a woman who has a craving for something. It just should not happen.
But, luckily, a co-worker of mine was quite curious about this shortage and managed to call around to numerous stores and find a store that had it!
It was organic. And therefore, 3.50 a can. Which to me, is a little pricey. Don't get me wrong--I like to buy organic and I do for some things. But I'm also a mama on a budget. It was just a little too expensive for me to stock up on--which is what I really wanted to do. Just load up my cupboards...
I had to buy a little though--I just had to have my pumpkin bread. So I bought my two cans and made my two loaves of pumpkin bread. I savored every bite for I did not know when I would have my beloved pumpkin bread again.....
So, I was back at the store the other day and guess what???!!!
Canned pumpkin is back!!!!! (at least where I live!) HOORAY!!
Oh how I've missed you Libby!
As I type this, I am waiting for this delectable bread to finish baking. I cannot wait.
Don't be surprised if I eat at least half the loaf....

Anyways, the recipe: Pumpkin Oatmeal Cookies. (with dried cherries and white chocolate chips but I used Cherry Craisins.) They are SCRUMPTIOUS!
ENJOY! And savor that pumpkin for you never know when there will be another shortage!

Oh, love pumpkin bread so I think I will try this out for Halloween. My kids will love it!
I NEED that bread... it looks so delicious and I had no idea that there was a pumpkin shortage.
Pumpkin bread is the reason I gain 5 lbs every fall.
